Chef and owner of the Ambigú restaurant and the 1888 restaurant.
Trained at the Alcalá de Henares School of Hospitality and Tourism in 2003, he began his culinary career in Madrid and London, working with Juaquin Felipe, Sergi Arola, Nobu Matsuisha, and Aurelio Morales “Yeyo.” They are largely responsible for his inspiration and training in the kitchen.
Ambigú, a leading restaurant that is now firmly established in Alcalá's gastronomic scene, has won several awards, accolades, and mentions in the Michelin Guide.
At the helm of the kitchen at Restaurante 1888, Alfonso, born in Alcalá, aims to take another step forward in his career and offer another unique vision of his cuisine.
